In my kitchen, cromesquis are my little comfort indulgence. I whip them up whenever I want to wow my guests with something unexpected. My favorite part? That magical moment when they bite into these treats and discover the melty cheese center hidden inside. It's simply wonderful!

A wonderful gem of ease

I really love how basic ingredients can transform into something remarkable. My homemade mashed potatoes, favorite cheese, and golden breading work together to create these delightful bites that always impress everyone. They've become my go-to trick for successful appetizer spreads!

The heroes of my dish

  • My potatoes: I always pick floury varieties for the creamiest mash.
  • My favorite cheese: Usually mozzarella, but sometimes I grab comté when I'm craving something bolder.
  • My eggs: Only the freshest ones for better coating.
  • My flour: Regular type works great every time.
  • My breadcrumbs: I often make these at home using stale bread.
  • My flavor boosters: Fresh garlic and garden parsley that really make everything pop.

My easy approach

The perfect mash
I start with super creamy potatoes, flavored with garlic and parsley. That's what makes everything work!
The hidden trick
I carefully tuck a small cheese cube right in the middle, making sure to seal the potato mixture around it completely.
The coating ritual
I roll my balls in flour, then egg, then breadcrumbs. Then I do it all again for extra crunch!
The waiting game
They need to chill overnight in the fridge. The wait isn't fun, but trust me, it's worth it.
The big finish
I watch my oil like a hawk to get that perfect golden color all around.

My clever tricks

I love trying different cheeses based on my mood. Mozzarella gives you those amazing stretchy strands, brie adds amazing creaminess... And when I want to surprise everyone, I mix some herbs de Provence into my breadcrumbs. For my health-conscious friends, I bake them with a light spray of olive oil instead of frying, and they turn out just as tasty!

What goes with my cromesquis

I always serve a crisp green salad alongside these bites for balance. My go-to dipping sauce? A simple mix of Greek yogurt, garlic and lemon that adds freshness to every bite. It's a winning combo that impresses everyone time after time!

Frequently Asked Questions

→ What type of cheese works best?
You can pick any cheese you like. For a gooey center, options like mozzarella, emmental, or comté are great.
→ Why chill before cooking?
Chilling helps the coating stay put and prevents breaking during frying. Overnight is ideal for the best results.
→ Can these be prepped earlier?
Absolutely. Make them a day in advance and fry the next day. They can also be frozen before frying.
→ How hot should the frying oil be?
The oil should be medium-hot (around 170°C). This ensures the outside gets crispy while the cheese inside melts nicely.
→ What’s the best way to serve them?
Serve immediately with a fresh salad. They’re also great with dipping sauces on the side.

Ingredients

01 Cooked potatoes, 400 g.
02 200 g of your favorite cheese.
03 2 eggs.
04 Flour.
05 Breadcrumbs.
06 Salt.
07 Pepper.
08 Garlic.
09 Parsley.
10 Frying oil.

Instructions

Step 01

Boil and peel the potatoes, then mash them. Add salt, minced parsley, crushed garlic, and some pepper for taste.

Step 02

Set up three bowls: one with flour, another with beaten eggs, and the last with breadcrumbs. Slice the cheese into 15 small pieces.

Step 03

Roll the mashed potato mix into balls, press a piece of cheese into the middle, and seal it shut completely.

Step 04

Dip each ball in flour first, then egg, and breadcrumbs. If you want them extra crispy, repeat the egg and breadcrumb steps once more.

Step 05

Wrap in plastic wrap and refrigerate overnight so they hold their shape better.

Step 06

Fry in hot oil for about 3 to 4 minutes until they turn golden brown.

Step 07

Drain off extra oil with paper towels, sprinkle on a pinch of salt, and enjoy them right away with a fresh salad.

Notes

  1. A proper chill time in the fridge helps the croquettes stay intact.
  2. A double coat of breadcrumbs gives them a fantastic crunch.
