Crispy cheese bites (Print Version)

# Ingredients:

01 - Cooked potatoes, 400 g.
02 - 200 g of your favorite cheese.
03 - 2 eggs.
04 - Flour.
05 - Breadcrumbs.
06 - Salt.
07 - Pepper.
08 - Garlic.
09 - Parsley.
10 - Frying oil.

# Instructions:

01 - Boil and peel the potatoes, then mash them. Add salt, minced parsley, crushed garlic, and some pepper for taste.
02 - Set up three bowls: one with flour, another with beaten eggs, and the last with breadcrumbs. Slice the cheese into 15 small pieces.
03 - Roll the mashed potato mix into balls, press a piece of cheese into the middle, and seal it shut completely.
04 - Dip each ball in flour first, then egg, and breadcrumbs. If you want them extra crispy, repeat the egg and breadcrumb steps once more.
05 - Wrap in plastic wrap and refrigerate overnight so they hold their shape better.
06 - Fry in hot oil for about 3 to 4 minutes until they turn golden brown.
07 - Drain off extra oil with paper towels, sprinkle on a pinch of salt, and enjoy them right away with a fresh salad.

# Notes:

01 - A proper chill time in the fridge helps the croquettes stay intact.
02 - A double coat of breadcrumbs gives them a fantastic crunch.
