Set up three bowls: one with flour, another with beaten eggs, and the last with breadcrumbs. Slice the cheese into 15 small pieces.

Roll the mashed potato mix into balls, press a piece of cheese into the middle, and seal it shut completely.

Dip each ball in flour first, then egg, and breadcrumbs. If you want them extra crispy, repeat the egg and breadcrumb steps once more.

Wrap in plastic wrap and refrigerate overnight so they hold their shape better.

Fry in hot oil for about 3 to 4 minutes until they turn golden brown.
