This beautiful citrus tart showcases a natural ombré effect created by layered citrus slices. The bright, candied oranges provide a tart contrast to the creamy vanilla mascarpone filling, all nestled in a tender peanut butter enriched crust.

This showstopping dessert always causes a moment of hesitation before the first slice - guests are reluctant to disturb the beautiful citrus pattern. But once tasted, it quickly disappears.

Key Ingredients

  • Mixed Oranges - Select three varieties for the ombré effect: sweet navel oranges, juicy regular oranges, and deep red blood oranges
  • Mascarpone - Use high-quality mascarpone, brought to room temperature for optimal texture
  • Peanut Butter - Choose smooth, unsweetened for best texture and flavor

Preparation Steps

1. Preparing the Citrus
  • Slice oranges very thinly using a mandoline
  • Begin candying with the lightest colored oranges
  • Cook until translucent but still holding shape
  • Drain carefully on paper towels
2. Making the Base
  • Whip eggs and sugar until ribbon stage
  • Gradually incorporate peanut butter
  • Add fresh orange zest for flavor
3. Assembly
  • Arrange orange slices from center outward
  • Create harmonious spiral with color gradients
  • Pour batter carefully to maintain pattern

This tart has become a treasured family recipe for special occasions. The key to success lies in patiently candying the citrus slices to perfection.

Perfecting the Cream

For the smoothest mascarpone cream, whip the mascarpone until silky before gently folding in the whipped cream.

Syrup Technique

Reserve the citrus cooking syrup to brush over the finished tart. This adds moisture and intensifies the citrus flavors.

18 1 cup heavy cream
19 1/4 cup powdered sugar

Instructions

Step 01

Slice the oranges really thin. In a small pot, bring the water, powdered sugar, and orange juice to a boil. Cook the regular and navel oranges for around 10-12 minutes, then add in the blood oranges.

Step 02

Whisk together the eggs and powdered sugar until smooth. Mix in the peanut butter, yogurt, extract, orange juice, and zest. Sift the flour and baking powder and fold it into the mixture.

Step 03

Line a 20cm cake pan with parchment paper. Arrange the candied orange slices in the bottom, then pour in the batter. Bake at 175°C for 30-40 minutes.

Step 04

Simmer the leftover orange syrup, sugar, and blood orange juice together for 5-7 minutes until slightly thickened. Pour half over the cake after it’s cool and out of the pan.
