Stuffed Zucchini Boats (Print Version)

# Ingredients:

01 - 1 pound ground beef, lean.
02 - 1 garlic clove, finely chopped.
03 - 3 medium zucchinis, around 6 ounces each.
04 - 1 onion, finely diced.
05 - 1 red bell pepper, chopped.
06 - 2 teaspoons olive oil for brushing.
07 - 1 cup shredded mozzarella cheese.
08 - 2 tablespoons grated Parmesan cheese.
09 - 1 and 1/2 cups pasta sauce, divided.
10 - 2 teaspoons of Italian herbs.
11 - 1/4 teaspoon ground black pepper.

# Instructions:

01 - Preheat your oven to 400°F to get it ready.
02 - Brown the beef with onions and garlic. Drain extra fat. Toss in red bell pepper and cook a couple more minutes. Pour in a cup of sauce, sprinkle in seasonings, and let it simmer for about 10 minutes.
03 - Slice zucchinis lengthwise and hollow out the centers, leaving about half an inch of the shell. Brush them with olive oil and season lightly with salt and pepper.
04 - Arrange the zucchini halves in a baking dish, pack them with the meat mixture, and spoon the rest of the sauce over the top.
05 - Pop it in the oven for 15 minutes. Sprinkle the cheeses over it and bake another 10-15 minutes until bubbly and slightly golden.

# Notes:

01 - You can add the zucchini cores to your sauce or keep them for another meal.
02 - Bigger zucchinis might need extra time in the oven.
03 - Other fillings like leftover chili or meat sauce can work great too.
04 - Prepare it ahead of time and bake when needed.
