Set your oven to 350°F (175°C). Lightly coat a baking sheet with non-stick spray.

In a blender or food processor, blend the banana, vanilla, cinnamon, and non-dairy milk. Pour this into a large bowl.

Cut each bread slice into 4 even strips.

Dip the bread strips one by one into the banana mixture, then lay them out on the prepared baking sheet.

Bake for 20-22 minutes. After 10 minutes, flip the strips over to cook the other side.
