Tuna & Avocado Cups (Print Version)

# Ingredients:

01 - 2 perfectly ripe avocados.
02 - 150g canned tuna, drained.
03 - 2 medium-sized tomatoes.
04 - 2 eggs.
05 - Juice of half a lemon.
06 - 2 tablespoons of mayo.
07 - Salt and black pepper.
08 - Fresh parsley or chives for garnish.

# Instructions:

01 - Boil the eggs in hot water for 10 minutes.
02 - Pop them into cold water and peel the shells.
03 - Smash the avocados into a creamy mash.
04 - Squeeze in the lemon juice and toss in some salt.
05 - Break up the tuna into flakes in a bowl.
06 - Combine the tuna with the mayo until blended.
07 - Sprinkle with salt and pepper to your liking.
08 - Dice the tomatoes into small chunks.
09 - Get rid of any seeds and extra liquid from the tomatoes.
10 - Add seasoning to the diced tomatoes.
11 - Layer avocado, tuna mixture, and tomatoes in the glasses.
12 - Crumble the hard-boiled egg on top.
13 - Add fresh herbs as a final touch.
14 - Keep in the fridge for 30 minutes before digging in.
