Chop the onion and cook it in the olive oil until it turns clear. Toss in the spinach, cooking it until the liquid is gone.

Whisk together the eggs and milk, then mix in the grated cheese and nutmeg. Season it with salt and pepper.

Divide the cooked spinach among the molds and pour in the egg and cheese mixture on top.

Pop it in a 180°C oven and bake for 20-25 minutes, until the muffins are golden and set.
