Spinach quiche muffins (Print Version)

# Ingredients:

01 - 4 large eggs.
02 - 100 grams of shredded cheese.
03 - 1 cup (100 ml) of whole milk or light cream.
04 - 1 medium onion.
05 - A pinch of ground nutmeg (optional).
06 - 1 tablespoon of olive oil.
07 - Fresh spinach, about 150 grams.
08 - Salt and pepper to taste.

# Instructions:

01 - Chop the onion and cook it in the olive oil until it turns clear. Toss in the spinach, cooking it until the liquid is gone.
02 - Whisk together the eggs and milk, then mix in the grated cheese and nutmeg. Season it with salt and pepper.
03 - Divide the cooked spinach among the molds and pour in the egg and cheese mixture on top.
04 - Pop it in a 180°C oven and bake for 20-25 minutes, until the muffins are golden and set.

02 - They're tasty whether you eat them chilled or warmed up.
