Rice bowls with spicy shrimp (Print Version)

# Ingredients:

→ For the shrimp

01 - 1 tablespoon olive oil
02 - 1 teaspoon smoked paprika
03 - 1/2 teaspoon garlic powder
04 - 1/2 teaspoon onion powder
05 - 1/2 teaspoon salt
06 - 1/4 teaspoon black pepper
07 - 1/4 teaspoon cayenne pepper (optional)
08 - 450g medium shrimp, peeled and deveined

→ For the spicy mayo

09 - 1/2 cup mayonnaise
10 - 1-2 tablespoons sriracha
11 - 1 teaspoon lime juice

→ For the base and toppings

12 - 2 cups jasmine or brown rice
13 - 1 tablespoon rice vinegar (optional)
14 - 1 avocado, sliced
15 - 1 cup shredded carrots
16 - 1 cup sliced cucumbers
17 - 2 tablespoons sesame seeds (optional)
18 - 2 chopped green onions
19 - Soy sauce or tamari (optional)

# Instructions:

01 - Toss the shrimp with olive oil and all the spices. Cook them in a skillet over medium-high heat for about 2-3 minutes on each side until they turn pink and opaque.
02 - Mix the mayonnaise, sriracha, and lime juice together in a bowl until the texture is nice and smooth.
03 - Prepare the rice by following the instructions on the package. Once it's done cooking, fluff it with a fork and stir in the rice vinegar if you want to.
04 - Divide the cooked rice into four bowls. Place the shrimp and toppings over the rice. Drizzle with the spicy mayo and sprinkle sesame seeds on top. Add soy sauce if you'd like.
