Spiced Cod Dish (Print Version)

# Ingredients:

01 - 600 g of cod.
02 - 2 garlic cloves.
03 - 2 onions.
04 - 1 zucchini.
05 - 1 red bell pepper.
06 - 2 tomatoes.
07 - 200 ml coconut milk.
08 - 2 tablespoons Colombo spice mix.
09 - 1 tablespoon turmeric.
10 - 1 tablespoon lime juice.
11 - 1 tablespoon olive oil.
12 - Fresh cilantro.
13 - Salt and ground pepper.
14 - Basmati rice.

# Instructions:

01 - Chop the garlic and onions finely. Dice the zucchini, tomatoes, and bell pepper into chunks.
02 - Cook the garlic and onions in olive oil until golden and fragrant.
03 - Sprinkle in the turmeric and Colombo powder. Toss in the veggies and let them cook for about 5-7 minutes.
04 - Stir in the coconut milk and bring to a simmer. Add the cod, cover, and let it cook gently for 10 minutes.
05 - Drizzle with lime juice, season with salt and pepper. Sprinkle fresh cilantro on top, and serve with steamed basmati rice.
