Shrimp Stir-Fry Noodles (Print Version)

# Ingredients:

01 - 200g of peeled shrimp.
02 - 1/2 of a yellow, green and red bell pepper.
03 - A carrot.
04 - 250g of Chinese noodles (egg or no egg).
05 - An onion.
06 - One garlic clove.
07 - 1 teaspoon's worth of fresh grated ginger.
08 - 2 tablespoons of sesame or olive oil.
09 - 5 tablespoons of soy sauce.
10 - A tablespoon of oyster sauce (optional).
11 - Salt and pepper, adjust to your liking.

# Instructions:

01 - Add the noodles to boiling water and cook them for around 5 minutes. Once done, drain and save them for later.
02 - Heat a splash of oil in a large pan or wok, then toss in the crushed garlic, grated ginger, and shrimp. Stir it all together for about 2-3 minutes, then take the shrimp out and set them aside.
03 - Using the same hot pan or wok, pour in a touch more oil and sauté the onions sliced thin. Add the bell peppers and carrots sliced into strips, and stir-fry until they're tender but still slightly crunchy.
04 - Add the shrimp back to the pan. Pour in the soy sauce (and oyster sauce if you want) and stir everything to coat well. Toss in those drained noodles and mix to combine.
05 - Let it all cook another 2-3 minutes so the flavors meld together. Adjust the seasoning with a pinch of salt, pepper, or even a drizzle of honey if you like a hint of sweetness.

# Notes:

01 - Serve this dish right away to keep the veggies nice and crisp.
02 - If you'd like, sprinkle some fresh cilantro or sesame seeds on top as a garnish.
