Mediterranean Muffins Snack (Print Version)

# Ingredients:

→ Main Ingredients

01 - 100 ml of milk
02 - 200 g of flour
03 - 3 eggs
04 - A packet of baking powder
05 - Pinch of salt, as needed
06 - Pepper, to taste
07 - 100 ml of olive oil

→ Toppings

08 - Chopped fresh basil - a handful
09 - Halved cherry tomatoes - 100 g
10 - Shredded mozzarella - 100 g

# Instructions:

01 - Set your oven to 180°C (350°F) and let it heat up.
02 - In a big bowl, combine the flour and baking powder. Then stir in the eggs, milk, and olive oil until the batter is smooth.
03 - Gently fold in the shredded mozzarella, basil, salt, and pepper.
04 - Grease your muffin tin or line it. Fill each cup with batter and place a halved cherry tomato on top, cut side up.
05 - Bake for about 20-25 minutes. They’re done when they’re golden on top and puffed up. Check by poking them with the tip of a knife.
06 - Let the muffins cool down a little before taking them out. Enjoy them warm or after they’ve cooled completely.
