Set your oven to 180°C (350°F) and let it heat up.

In a big bowl, combine the flour and baking powder. Then stir in the eggs, milk, and olive oil until the batter is smooth.

Gently fold in the shredded mozzarella, basil, salt, and pepper.

Grease your muffin tin or line it. Fill each cup with batter and place a halved cherry tomato on top, cut side up.

Bake for about 20-25 minutes. They’re done when they’re golden on top and puffed up. Check by poking them with the tip of a knife.

Let the muffins cool down a little before taking them out. Enjoy them warm or after they’ve cooled completely.
