Cheesy Bacon Madeleines (Print Version)

# Ingredients:

01 - 100 g bacon strips.
02 - 3 eggs.
03 - 150 g all-purpose flour.
04 - 5 g baking powder.
05 - 100 g reblochon cheese.
06 - 50 ml olive oil.
07 - 100 ml milk.
08 - Salt and pepper to taste.

# Instructions:

01 - Fry the bacon chunks till crispy, then let them drain on a paper towel.
02 - Mix the flour and baking powder together. In another bowl, whisk the eggs, olive oil, and milk. Blend both mixtures together.
03 - Toss in diced reblochon and cooked bacon pieces to your batter. Add seasoning lightly.
04 - Chill the batter in the fridge for 30 minutes if you'd like (optional).
05 - Spoon the batter into greased madeleine molds, then bake for 10-12 minutes at 200°C.
