Fry the bacon chunks till crispy, then let them drain on a paper towel.

Mix the flour and baking powder together. In another bowl, whisk the eggs, olive oil, and milk. Blend both mixtures together.

Toss in diced reblochon and cooked bacon pieces to your batter. Add seasoning lightly.

Chill the batter in the fridge for 30 minutes if you'd like (optional).

Spoon the batter into greased madeleine molds, then bake for 10-12 minutes at 200°C.
