Peel the onion and chop it into small pieces.

Peel the carrots and cut them into chunks.

Rinse off the apples, then slice them into quarters.

Wrap the roast tightly with the slices of bacon.

Use kitchen string to tie the roast firmly.

Warm up the olive oil in a cast-iron pot.

Sprinkle the roast generously with salt and pepper.

Sear the roast for 10 minutes over medium heat until browned.

Take the roast out of the pot for now.

Cook the chopped onion over low heat for 5 minutes.

Place the roast back into the pot.

Arrange the carrot chunks and apple quarters around the roast.

Add a bit more salt and pepper.

Pour in 5cl of water.

Drizzle the honey over everything.

Cover with a lid and simmer lightly for 1 hour and 15 minutes.

Flip the roast over and spoon the juices on top regularly.

Take off the string before slicing and serving.
