Meat Roast with Apples (Print Version)

# Ingredients:

01 - 2 tablespoons of honey.
02 - 3 tablespoons of olive oil.
03 - 6 slices of bacon.
04 - 3 tablespoons of finely chopped hazelnuts.
05 - 4 carrots from a bunch.
06 - A clove of garlic.
07 - 4 apples.
08 - One onion.
09 - 1.2kg beef roast.
10 - Salt.
11 - Pepper.

# Instructions:

01 - Peel the onion and chop it into small pieces.
02 - Peel the carrots and cut them into chunks.
03 - Rinse off the apples, then slice them into quarters.
04 - Wrap the roast tightly with the slices of bacon.
05 - Use kitchen string to tie the roast firmly.
06 - Warm up the olive oil in a cast-iron pot.
07 - Sprinkle the roast generously with salt and pepper.
08 - Sear the roast for 10 minutes over medium heat until browned.
09 - Take the roast out of the pot for now.
10 - Cook the chopped onion over low heat for 5 minutes.
11 - Place the roast back into the pot.
12 - Arrange the carrot chunks and apple quarters around the roast.
13 - Add a bit more salt and pepper.
14 - Pour in 5cl of water.
15 - Drizzle the honey over everything.
16 - Cover with a lid and simmer lightly for 1 hour and 15 minutes.
17 - Flip the roast over and spoon the juices on top regularly.
18 - Take off the string before slicing and serving.
19 - Sprinkle chopped hazelnuts on top just before serving.
