Pumpkin Goat Crumble (Print Version)

# Ingredients:

01 - 1 small red kuri squash (about 500g).
02 - 1 yellow onion.
03 - 1 round of fresh goat cheese.
04 - 30 grams of softened unsalted butter.
05 - 30 grams of grated parmesan cheese.
06 - 40 grams of all-purpose flour.
07 - 2 tablespoons of pumpkin seeds.
08 - 1 tablespoon of olive oil.
09 - Salt and freshly ground black pepper.

# Instructions:

01 - Rinse, peel, and cut the squash into small chunks.
02 - Sauté the chopped onion in olive oil, toss in the squash, and season with salt and pepper. Pour in 10cl of water, cover up, and let it cook for 15-20 minutes.
03 - Combine the softened butter, flour, parmesan, and pumpkin seeds in a bowl. Mix until you’ve got a crumbly dough texture.
04 - Spoon the squash into ramekins, spread the goat cheese on top, and finish by covering with the crumble mixture.
05 - Bake it at 180°C for 30 minutes, then serve nice and warm.

# Notes:

01 - Ensure the squash is fully soft before putting it into the oven.
02 - You can make the crumble in advance and keep it in the fridge until needed.
