Pork with Creamy Potatoes (Print Version)

# Ingredients:

→ Pork

01 - 1 to 1.2 kg pork (like loin or shoulder)
02 - Paprika, as needed
03 - Salt, as desired
04 - Ground black pepper, as desired

→ Vegetable Layer

05 - Vegetable oil, for cooking
06 - 1 carrot, peeled and cut into slices
07 - 200 grams of mushrooms, chopped into slices
08 - Salt, as preferred
09 - Pepper, as you like
10 - 2 onions, finely diced

→ Mashed Potatoes

11 - 6 potatoes, peeled and cubed
12 - A pot full of water, for boiling
13 - Salt, to your taste
14 - 200 grams of cheese (Suluguni or any other type)
15 - Butter, as desired
16 - Warm milk, as needed
17 - Parsley, chopped, for decoration

# Instructions:

01 - Set your oven at 180-190°C to preheat. Take both sides of the pork and rub in the salt, black pepper, and paprika. Put the seasoned meat onto a baking dish or baking tray.
02 - In a pan over medium heat, warm up some vegetable oil. Throw in the diced onions and cook until softening begins. Toss in the carrot slices and sauté for another few minutes. Add the mushrooms and let them cook until tender, seasoning everything with some salt and pepper.
03 - Spread the cooked veggies over the pork in the dish. Pop it into your preheated oven and bake for about 40 minutes at 180-190°C.
04 - Boil the cubed potatoes with a pinch of salt until they're soft (about 15-20 minutes). Drain the water, then mash them while mixing in butter and warm milk. Stir cheese into the mix until it's melted. Add parsley on top to finish.
05 - After 40 minutes, check if the pork is cooked all the way through. If it's done, spoon mashed potatoes around or over the pork. Crank up the oven temperature to 220°C and let it bake for another 15-20 minutes, or until it's slightly browned on top.

01 - Make sure the pork gets plenty of seasoning—it brings out the taste!
02 - A meat thermometer is handy; you're aiming for an internal temp of at least 70°C.
03 - For an extra kick in your mash, toss in some garlic or fresh herbs.
04 - Want a crispier potato crust? Hit it with the broiler for a few minutes.
