Tenderloin with Veggies (Print Version)

# Ingredients:

→ For the meat and vegetables

01 - 1 medium pork tenderloin, about 400g
02 - 2 large carrots
03 - 1 big zucchini
04 - 10 cherry tomatoes
05 - 1 onion
06 - 4 big potatoes
07 - 1 apple
08 - Some slices of butter

→ For the marinade

09 - 1 tablespoon of honey
10 - 3 tablespoons of sweet soy sauce
11 - 1 teaspoon of wasabi
12 - Salt and pepper to taste

→ For the dressing

13 - 5 tablespoons of sweet soy sauce
14 - 3 tablespoons of water
15 - 1/2 teaspoon of wasabi
16 - 3 tablespoons of oil
17 - Salt and pepper to season

# Instructions:

01 - Slice the pork tenderloin in half. Combine honey, sweet soy sauce, wasabi, and a pinch of salt and pepper. Coat the meat with this mixture, then let it sit in the fridge for 2 hours.
02 - Chop potatoes into cubes, cut the carrots and zucchini into sticks, and slice the apple into wedges. Mix together all the dressing ingredients in a bowl.
03 - Place the pork tenderloin into a baking dish and arrange the vegetables around it. Stir the leftover marinade with the dressing, then pour it over the veggies. Add little bits of butter on top for flavor.
04 - Cook for 15 minutes at 240°C on the top rack. Flip the meat, then roast for another 15 minutes. Lower the heat to 200°C and bake for 10 more minutes while basting frequently.
