Cut the pork tenderloin into medium-sized chunks. Slice the chorizo into thin rings after peeling the casing. Mince the garlic finely after peeling it.

Cook the garlic and chorizo together on medium heat until fragrant. Take them out of the pan and set aside. In the same pot, brown the pork chunks on all sides.

Add the garlic and chorizo mixture back into the pot. Stir in smoked paprika, mustard, and water. Let the dish simmer gently for about 30 minutes.

Mix the cornstarch with a little bit of the cooking liquid, then stir it into the pot. Let it cook for another 10 minutes. Pair the dish with pasta or rice and serve!
