Cod veggie gratins (Print Version)

# Ingredients:

01 - 400 g of cod.
02 - 1 zucchini.
03 - 2 carrots.
04 - 1 tablespoon of olive oil.
05 - 2 tablespoons of sour cream.
06 - 50 g of grated cheese.
07 - 1 tablespoon of chopped parsley.
08 - Salt.
09 - Pepper.

# Instructions:

01 - Peel the carrots and chop both the carrots and zucchini into small cubes.
02 - Cook the veggies in olive oil on medium heat for about 5 minutes, keeping them golden yet crisp.
03 - Cut the cod into chunks, and check for and remove any bones if needed.
04 - Mix the veggies, cod, sour cream, half of the cheese, parsley, salt, and pepper together.
05 - Divide the mixture into four ramekins, then sprinkle the remaining cheese on top.
06 - Pop into the oven at 180°C and bake for 20 minutes until the top is nicely browned.

01 - You can swap veggies based on what's in season.
02 - Feel free to use different cheeses to mix things up.
