Peel the carrots and chop both the carrots and zucchini into small cubes.

Cook the veggies in olive oil on medium heat for about 5 minutes, keeping them golden yet crisp.

Cut the cod into chunks, and check for and remove any bones if needed.

Mix the veggies, cod, sour cream, half of the cheese, parsley, salt, and pepper together.

Divide the mixture into four ramekins, then sprinkle the remaining cheese on top.

Pop into the oven at 180°C and bake for 20 minutes until the top is nicely browned.
