Mediterranean Chicken Dish (Print Version)

# Ingredients:

01 - 4 chicken breasts.
02 - 4 potatoes, diced small.
03 - 1 red bell pepper, sliced.
04 - 1 green bell pepper, sliced.
05 - 1 can (400g) of crushed tomatoes.
06 - 1 onion, thinly sliced.
07 - 3 garlic cloves, finely chopped.
08 - A mix of dried Italian herbs.
09 - Salt and black pepper for seasoning.
10 - Olive oil for cooking.
11 - Fresh parsley, chopped, for topping.

# Instructions:

01 - Chop the chicken, dice the potatoes, and slice the peppers. Thinly slice the onion and mince the garlic.
02 - Warm the olive oil in a skillet. Sear the chicken on both sides until golden, then set it aside.
03 - Using the same pan, sauté the onion and garlic until fragrant and tender.
04 - Toss in the potatoes and peppers. Stir and cook for a few minutes.
05 - Pour in the crushed tomatoes, sprinkle with herbs, and season with salt and pepper. Add the chicken back in and simmer for 20-25 minutes.
06 - Check if the potatoes are nice and tender. Sprinkle fresh parsley on top and serve warm.
