Maple taffy cones (Print Version)

# Ingredients:

→ Waffle Cones

01 - 140 g all-purpose flour
02 - A pinch of salt
03 - 5 ml chia seeds
04 - 60 ml unsweetened applesauce
05 - 30 ml water
06 - 60 g honey
07 - 55 g cane sugar
08 - 45 ml melted coconut oil
09 - 5 ml vanilla extract

→ Maple Taffy

10 - 540 ml maple syrup

→ Cone Toppings

11 - Maple butter
12 - Pecans or other nuts to taste (optional)

# Instructions:

01 - Stir the flour and salt in a small bowl, then set aside.
02 - Grind the chia seeds finely. Whisk the ground seeds with applesauce and water in a big bowl. Let the mixture sit for five minutes.
03 - Mix honey, cane sugar, melted coconut oil, and vanilla extract into the wet ingredients with an electric mixer for about a minute. Slowly add in the dry ingredients and stir with a wooden spoon until the batter turns smooth.
04 - Heat your waffle cone maker. Spoon 10 ml of batter into the center, close the lid, and cook for around three minutes or until golden. Take the piece out and roll it into a cone using a pastry nozzle right away.
05 - Slide the cones off the nozzle and leave them on a cooling rack. Repeat the steps until you’ve used up all the batter.
06 - Test your boiling water’s temperature and add 26°F to find the maple syrup’s target temperature. Bring the syrup to a boil until it reaches the target temperature. Take 315 ml for taffy, and put the rest in a bowl. Stir part of it until it’s soft enough to shape into small balls of maple sugar.
07 - Drop a maple sugar ball into each cone, then slowly pour in the slightly thickened syrup. Chill the cones right away to help them set.
08 - Once the syrup hardens, spread 2.5 ml of maple butter on each cone and add a nut if you'd like. Chill them once more before serving.

# Notes:

01 - Chilling the cones before adding the syrup helps it set faster.
