Soft lemon mascarpone cake (Print Version)

# Ingredients:

→ Cake

01 - 3 eggs
02 - 250g mascarpone cheese
03 - 150g powdered sugar
04 - Zest and juice from 2 lemons
05 - 150g all-purpose flour
06 - 1 packet of baking powder
07 - A small pinch of salt
08 - 80g melted butter

→ Optional Glaze

09 - 2-3 tablespoons of lemon juice
10 - 100g icing sugar

# Instructions:

01 - Preheat your oven to 180°C. Grease and flour your pan, or line it with parchment paper.
02 - Mix the mascarpone and sugar together until smooth. Beat in the eggs, one at a time.
03 - Mix in the lemon juice and zest to the batter.
04 - Sift the flour, baking powder, and salt. Gently fold them into the batter.
05 - Pour in the melted butter and mix everything until the batter is smooth.
06 - Transfer the batter into your pan and bake for about 30 to 35 minutes. A knife inserted into the middle should come out clean when it's done.
07 - Combine the icing sugar and lemon juice. Spread the glaze over the cooled cake.

# Notes:

01 - Wait until the cake cools entirely before adding the glaze.
02 - The mascarpone should be at room temperature to make mixing easier.
