Honey Roasted Carrots (Print Version)

# Ingredients:

01 - 800 g of carrots, peeled and sliced into sticks.
02 - 3 tablespoons of honey.
03 - 2 tablespoons of olive oil.
04 - 3 cloves of garlic, finely chopped.
05 - 1 teaspoon of fresh or dried thyme.
06 - Salt and pepper to taste.
07 - Chopped fresh parsley for garnish (optional).

# Instructions:

01 - Get your oven hot by preheating it to 200°C (390°F). Line a baking tray with parchment paper or foil.
02 - Toss the carrots in a big bowl with olive oil, honey, chopped garlic, thyme, salt, and pepper. Stir everything until the carrots are evenly coated.
03 - Spread the carrots out on the tray in a single layer so they cook evenly.
04 - Pop the tray into the oven and roast for about 25–30 minutes. Stir them halfway through. When they’re soft and caramelized at the edges, they’re done.
05 - Transfer the roasted carrots to a serving dish. Sprinkle on some fresh parsley for color, then serve while they’re still warm.

# Notes:

01 - For a spicy twist, sprinkle a pinch of Cayenne pepper or paprika.
02 - Maple syrup can swap out the honey for a vegan option.
03 - Top with toasted almonds or walnuts for extra crunch.
