Get your oven hot by preheating it to 200°C (390°F). Line a baking tray with parchment paper or foil.

Toss the carrots in a big bowl with olive oil, honey, chopped garlic, thyme, salt, and pepper. Stir everything until the carrots are evenly coated.

Spread the carrots out on the tray in a single layer so they cook evenly.

Pop the tray into the oven and roast for about 25–30 minutes. Stir them halfway through. When they’re soft and caramelized at the edges, they’re done.

Transfer the roasted carrots to a serving dish. Sprinkle on some fresh parsley for color, then serve while they’re still warm.
