Crack the eggs into a bowl, whisk them up, and season with some salt and pepper.

Melt the butter in a medium nonstick pan (about 9 inches) over medium heat. Pour in the egg mixture and cook it for 2 to 3 minutes. Use a spatula to gently break the base a little for even cooking.

Once the edges are nearly cooked and the center is just a bit soft, lay the ham, cheese, and chives onto one side of the omelette.

Fold the omelette in half to cover the filling, then cook for another 2 minutes or until it's as firm as you like. Slide it onto a plate and enjoy with some toast.
