Ham cheese omelette (Print Version)

# Ingredients:

01 - 5 eggs
02 - 1 tablespoon of chives, finely chopped
03 - 2 tablespoons shredded cheddar cheese
04 - 1 tablespoon butter
05 - 2 tablespoons diced sliced ham

# Instructions:

01 - Crack the eggs into a bowl, whisk them up, and season with some salt and pepper.
02 - Melt the butter in a medium nonstick pan (about 9 inches) over medium heat. Pour in the egg mixture and cook it for 2 to 3 minutes. Use a spatula to gently break the base a little for even cooking.
03 - Once the edges are nearly cooked and the center is just a bit soft, lay the ham, cheese, and chives onto one side of the omelette.
04 - Fold the omelette in half to cover the filling, then cook for another 2 minutes or until it's as firm as you like. Slide it onto a plate and enjoy with some toast.

# Notes:

01 - For a little kick, sprinkle a bit of Espelette pepper on top before serving.
