Goat Cheese Bites (Print Version)

# Ingredients:

01 - 2 big unpeeled sweet potatoes.
02 - 1/2 teaspoon Dijon mustard.
03 - 1 tablespoon chopped fresh rosemary.
04 - 1/4 cup toasted pecan pieces.
05 - 3 tablespoons dried cranberries.
06 - 1 small-sized shallot.
07 - 1/2 Granny Smith apple, diced.
08 - 2 teaspoons apple cider vinegar.
09 - 1/2 teaspoon black pepper.
10 - 1 teaspoon coarse salt.
11 - 2 tablespoons olive oil.
12 - 1/2 teaspoon maple syrup or honey.
13 - 2 ounces of goat cheese.

# Instructions:

01 - Turn on to 425°F. Get two baking trays ready. Oil both surfaces.
02 - Slice into rounds about 1/2 inch thick. Spread out on trays. Coat with oil and sprinkle salt and pepper.
03 - Bake for 15-20 minutes. Flip over. Roast another 5-8 minutes. Check tenderness.
04 - Stir together vinegar, mustard, and maple syrup. Chop nuts, shallot, apple, and cranberries. Add them to the dressing along with rosemary. Crumble half the cheese in and mix.
05 - Spoon the topping mixture over each piece of potato. Sprinkle the leftover goat cheese on top.

# Notes:

01 - You can make the topping a day early.
02 - Roast sweet potatoes ahead, then warm them up.
03 - Thin potatoes work best for uniform pieces.
04 - Peeling the sweet potatoes isn’t necessary.
