Garlic Mushroom Pasta (Print Version)

# Ingredients:

→ Base

01 - 3 tablespoons butter, split up
02 - 4 ounces dry pasta
03 - 1 tablespoon olive oil
04 - 8 ounces of sliced cremini mushrooms
05 - 1/2 medium onion, diced
06 - 3 minced garlic cloves
07 - 1/2 teaspoon Dijon mustard

→ Sauce

08 - Zest from half a lemon
09 - 1/4 cup white wine, chicken or veggie broth
10 - 1/2 teaspoon fresh lemon juice
11 - Salt and pepper for seasoning
12 - 1/2 cup parmesan, finely grated
13 - 2 tablespoons fresh parsley, chopped

# Instructions:

01 - Cook pasta in boiling salted water until firm but not overdone.
02 - Sauté mushrooms and onions in butter and oil for 8-10 minutes until golden.
03 - Throw in the rest of the butter, Dijon, and garlic. Cook briefly, about 1 minute.
04 - Pour in the broth and lemon juice, letting it simmer for about a minute.
05 - Take off the heat and mix cheese, parsley, and some pasta water. Toss it all with the pasta.

# Notes:

01 - You can double this, but mushrooms will take extra time to brown.
02 - Makes enough for 2 as a main course or 4 as a side dish.
