Easy Skyr Flan (Print Version)

# Ingredients:

01 - 50g of honey.
02 - 2 eggs.
03 - 250g of Skyr.
04 - 1/2 lemon (juice and zest).
05 - 30g of cornstarch.
06 - 100g of mixed berries (for the sauce).

# Instructions:

01 - Break the eggs into a bowl, then mix in the Skyr, lemon zest and juice, cornstarch, and honey.
02 - Whisk the mixture until it's smooth and lump-free.
03 - Pour the batter into a greased baking pan.
04 - Bake in a preheated oven at 180°C for 30-40 minutes.
05 - Let it cool off before refrigerating it overnight.
06 - Top with berry sauce and a few mint leaves, then serve.

# Notes:

01 - You can keep this dessert in the fridge for up to 2-3 days.
02 - Swap the Skyr for plain yogurt or cottage cheese if you prefer.
