Pumpkin Fritters (Print Version)

# Ingredients:

01 - 2 handfuls shredded butternut squash (or your favorite type).
02 - 1/2 of a small onion, diced.
03 - 1 big egg.
04 - 4 tablespoons of plain flour.
05 - A quarter cup of grated fresh parmesan.
06 - A pinch of salt, adjust to your liking.
07 - A dash or two of red chili flakes or ground black pepper.
08 - 1/2 to 1 teaspoon dried parsley, or a bit more if using fresh.
09 - 1-2 tablespoons of olive oil for frying.

# Instructions:

01 - Shred your squash and blot it dry to remove extra moisture. Toss it into a medium-sized bowl along with the diced onion, egg, parmesan, flour, salt, a little pepper, and your parsley. Stir until combined. Either scoop out spoonfuls and flatten or shape into patties by hand. (You should get about six).
02 - Heat up some olive oil in a medium skillet. Pop your fritters in—three at a time works well—and cook till both sides are golden. Take them out and place them on a plate with some paper towels. Dig in right away!
