Soft yogurt cake (Print Version)

# Ingredients:

→ Main Mix

01 - 375g (3 small tubs) of plain yogurt
02 - 2 large eggs
03 - 150g granulated sugar
04 - 180g all-purpose flour
05 - 100ml vegetable oil
06 - 11g packet of baking powder
07 - Optional: 1 small packet of vanilla sugar

→ Topping Suggestions

08 - Grated zest of an orange or lemon
09 - 1 teaspoon vanilla extract
10 - 100g fresh fruit, any type you like
11 - 50g chocolate chips

# Instructions:

01 - Preheat your oven to 180°C (350°F). Grease your pan and dust it with a little flour, or line it with baking paper.
02 - In a big mixing bowl, whisk the eggs and sugar together until the mix is pale and fluffy.
03 - Pour in the plain yogurts and toss in your chosen flavors (a bit of zest or vanilla). Blend it all until smooth.
04 - Sift the flour and baking powder over the bowl. Gently fold everything together using a spatula to create a smooth mix.
05 - Stir in the oil until it’s well combined. If you’re adding any toppings, now’s the time to fold those in too.
06 - Pour the batter into your prepared pan. Pop it in the oven for 35-40 minutes. Check if it’s done by poking it with a knife—if it comes out clean, it’s ready!

# Notes:

01 - Using the yogurt tubs to measure ingredients can make it easier.
02 - Store the cake in an airtight box, and it’ll stay great for up to three days.
