Creamy Tomato Tortellini (Print Version)

# Ingredients:

01 - 1-2 cups chopped spinach.
02 - 1/8 teaspoon black pepper.
03 - 1 tablespoon tomato paste.
04 - 3/4 cup grated Parmesan cheese.
05 - 1/2 tablespoon olive or avocado oil.
06 - 3 cups cooked cheese tortellini.
07 - 1 teaspoon dried basil.
08 - 2 minced garlic cloves.
09 - 2 cups cherry tomatoes.
10 - 1 teaspoon Italian seasoning.
11 - 1 finely chopped shallot.
12 - 1/2 cup roasted red peppers.
13 - 1/2 teaspoon salt.
14 - 1 cup heavy cream.

# Instructions:

01 - Start by cooking the garlic and shallot in the oil over medium heat. Stir it around for about 3 minutes.
02 - Toss in the cherry tomatoes, let them soften up for around 10 minutes. Gently squish them with a spoon.
03 - Mix in the spices, roasted peppers, and tomato paste. Stir in the heavy cream, then simmer for another 2-3 minutes.
04 - Add the spinach, Parmesan, and tortellini to the sauce. Stir everything well and sprinkle extra Parmesan on top if you'd like.
05 - Taste it, adjust the seasoning, and serve. Garnish with some chopped parsley or basil for a pop of color.
