Creole fish sauce (Print Version)

# Ingredients:

01 - 2 red snapper fillets.
02 - 1 tablespoon olive oil.
03 - Salt and pepper to taste.
04 - 1/2 cup diced bell peppers.
05 - 1/4 cup chopped onions.
06 - 1/2 cup diced tomatoes.
07 - 1 cup heavy cream.
08 - 2 minced garlic cloves.
09 - 1 tablespoon Creole seasoning.
10 - 1 tablespoon chopped parsley.
11 - 1/2 cup chicken stock.

# Instructions:

01 - Season the fish, then sear them for 3-4 minutes per side in the olive oil.
02 - In the same skillet, sauté the garlic along with bell peppers and onions.
03 - Mix the tomatoes, chicken stock, cream, and Creole seasoning. Let it simmer gently for 5-7 minutes.
04 - Add the fish back to the pan, warm them up in the sauce, and sprinkle with parsley.

02 - The sauce should have a creamy, slightly thick texture.
