Creamy Chicken Ricotta (Print Version)

# Ingredients:

01 - 12 oz of whole grain pasta.
02 - 1 lb of chicken breast.
03 - 2 tablespoons of olive oil.
04 - 3 minced garlic cloves.
05 - 1 cup of ricotta cheese.
06 - 1/2 cup grated Parmesan cheese.
07 - 1/2 cup chicken broth.
08 - 1/2 cup heavy cream (optional).
09 - 1 teaspoon Italian herbs.
10 - 1/4 teaspoon chili flakes (optional).
11 - Salt and black pepper to taste.
12 - 2 cups fresh spinach (optional).
13 - Fresh parsley or basil.

# Instructions:

01 - Boil the pasta in salted water until just firm. Save 1/2 cup of the cooking water.
02 - Season chicken and fry it in oil until browned, 6-8 minutes. Set aside.
03 - Sauté garlic, then mix in ricotta, Parmesan, broth, and cream. Add spices and herbs.
04 - Toss the pasta with the chicken and sauce. Adjust texture with the saved pasta water.
05 - Stir in spinach if you'd like, letting it wilt for 2-3 minutes. Top with fresh herbs.
