Cinnamon brioche bites (Print Version)

# Ingredients:

→ For the brioche

01 - 2 eggs
02 - A brioche loaf sliced into 2-cm cubes
03 - 1 teaspoon of ground cinnamon
04 - 40 grams of granulated sugar
05 - A pinch of salt
06 - 60 ml of milk (whole or low-fat)
07 - 1 teaspoon of vanilla extract
08 - 20-30 grams of butter for cooking

09 - Maple syrup
10 - Chocolate sauce
11 - Salted caramel
12 - Berry coulis
13 - Chocolate ganache

# Instructions:

01 - In a large bowl, combine the eggs, milk, vanilla extract, and salt. Whisk everything together until smooth.
02 - Cut your brioche loaf into cubes around 2 cm on each side. Using slightly stale brioche works best since it holds its shape and soaks up liquid better.
03 - Dunk the brioche cubes into the egg-milk-vanilla mixture. Let them soak for 1-2 minutes on each side, ensuring they’re fully coated.
04 - Heat some butter on medium in a non-stick pan. Cook the brioche cubes until golden and crisp on all sides, about 2-3 minutes.
05 - Stir together the cinnamon and sugar in a shallow dish. Once the cubes are done, roll them in the mixture while still warm to coat them.

# Notes:

01 - Slightly stale brioche works better because it absorbs more without falling apart.
02 - Don’t over-soak the cubes, or they might break apart.
03 - Serve while still warm—it's even more delicious that way!
