Set your oven to 200°C. Slice the sweet potato lengthwise and place the cut side down on a baking tray lined with parchment paper. Roast for 45-60 minutes or until the middle is soft and tender.

Finely slice the onion and roughly chop the raw chicken. Cook the onion in a bit of olive oil until softened, then toss in the chicken and brown it. Stir in the tomato sauce and season with salt and pepper.

Scoop out the middle of the roasted sweet potatoes and mash it with a fork. Blend the mashed sweet potato with the chicken mixture, then pile it back into the sweet potato skins.

Sprinkle the stuffed sweet potatoes with shredded cheddar and a pinch of dried oregano. Place under the grill until the cheese is bubbling and golden.
