Stuffed sweet potato with chicken (Print Version)

# Ingredients:

01 - 1 large sweet potato, around 600g
02 - 250g chicken breast
03 - 1 onion
04 - 150g tomato sauce
05 - 25g shredded cheddar cheese
06 - Dried oregano
07 - Olive oil
08 - Salt and black pepper

# Instructions:

01 - Set your oven to 200°C. Slice the sweet potato lengthwise and place the cut side down on a baking tray lined with parchment paper. Roast for 45-60 minutes or until the middle is soft and tender.
02 - Finely slice the onion and roughly chop the raw chicken. Cook the onion in a bit of olive oil until softened, then toss in the chicken and brown it. Stir in the tomato sauce and season with salt and pepper.
03 - Scoop out the middle of the roasted sweet potatoes and mash it with a fork. Blend the mashed sweet potato with the chicken mixture, then pile it back into the sweet potato skins.
04 - Sprinkle the stuffed sweet potatoes with shredded cheddar and a pinch of dried oregano. Place under the grill until the cheese is bubbling and golden.

01 - Goes well served with a fresh salad or steamed veggies
02 - To check if the sweet potato’s cooked, gently poke it with a fork
