Chicken Salad Melt (Print Version)

# Ingredients:

01 - 1/4 cup mayonnaise.
02 - 1/4 cup Greek yogurt.
03 - 1/4 cup finely diced celery.
04 - 2 teaspoons Dijon mustard.
05 - 2 teaspoons zest from a lemon.
06 - 1/4 teaspoon ground salt.
07 - 1/4 teaspoon black pepper.
08 - 1/4 cup thin red onion slices.
09 - 1 cup pulled rotisserie chicken.
10 - 2 tablespoons of melted butter.
11 - 4 slices of American cheese.
12 - 1 medium tomato, cut into slices.
13 - 8 pieces of whole-wheat bread.

# Instructions:

01 - Combine the yogurt, mayonnaise, mustard, celery, and lemon zest in a bowl. Toss in the onion and shredded chicken, stirring until mixed.
02 - Slather butter on one side of each bread slice. Lay chicken salad on the opposite side. Stack tomato slices and cheese on top. Close them with another slice, buttered side facing out.
03 - Warm up your skillet on medium-low heat. Cover sandwiches with a small lid and cook them 3-4 minutes per side. Keep warm while finishing the rest.
