Tasty Chicken with Ginger (Print Version)

# Ingredients:

→ Main Protein

01 - 250g of boneless chicken thighs and breast
02 - 50g of fresh ginger
03 - 2 cloves of garlic
04 - 1 tablespoon of neutral cooking oil

→ Sauce

05 - 1 teaspoon of tomato paste
06 - 1 teaspoon of nuoc-mam (fish sauce)
07 - 10cl of Noilly Prat or white Martini
08 - 1 teaspoon of veal stock concentrate
09 - 1 tablespoon of sweet soy sauce
10 - 1 teaspoon of Espelette or mild chili pepper
11 - 1 tablespoon of light soy sauce

→ Garnish and Sides

12 - Chopped parsley, chives, or cilantro for sprinkling
13 - Rice as a side
14 - Green vegetables as a side

# Instructions:

01 - Remove the skin from the garlic and ginger. Chop up the garlic and slice the ginger into thin strips. Cut the chicken into small cubes.
02 - Stir-fry the chicken and the ginger in a pan using neutral oil. Mix in the garlic and give it a good stir.
03 - Stir in all the sauce ingredients until well combined. Cover and simmer gently on low heat for 30 minutes.
04 - After 30 minutes, check the sauce's thickness. If it’s too thin, leave uncovered and cook a bit longer to reduce and caramelize.
05 - Dish up the meal with a sprinkle of chopped parsley, cilantro, or chives on top. Serve alongside rice and green vegetables.
