Chicken with chorizo and potatoes (Print Version)

# Ingredients:

01 - 4 chicken thighs (parts include drumsticks and upper thigh).
02 - 10 medium-sized potatoes.
03 - Half a stick of mild chorizo.
04 - 2 red onions.
05 - Dried thyme.
06 - 4 tablespoons of olive oil.
07 - 3 tablespoons of balsamic vinegar.
08 - Golden flaxseed or sesame seeds.
09 - Salt and pepper to taste.
10 - 6 to 8 cl of water.

# Instructions:

01 - Separate the drumsticks from the chicken thighs.
02 - Peel the onions and roughly chop them up. Then, peel the potatoes and slice them into halves.
03 - Slice the half chorizo stick into pieces about 1 to 2 cm thick.
04 - Spread everything out on a baking tray. Sprinkle thyme on top, and season with salt and pepper.
05 - Pour the olive oil and balsamic vinegar over everything. Then, add a bit of water (around 6-8 cl).
06 - Preheat your oven to 180°C (350°F). Bake for about 50-55 minutes, stirring things around once or twice.
07 - Sprinkle some seeds on top right before serving.

01 - A hearty dish that pairs well with some fresh green salad.
02 - Leftovers can be kept in the fridge for up to 2-3 days.
