Separate the drumsticks from the chicken thighs.

Peel the onions and roughly chop them up. Then, peel the potatoes and slice them into halves.

Slice the half chorizo stick into pieces about 1 to 2 cm thick.

Spread everything out on a baking tray. Sprinkle thyme on top, and season with salt and pepper.

Pour the olive oil and balsamic vinegar over everything. Then, add a bit of water (around 6-8 cl).

Preheat your oven to 180°C (350°F). Bake for about 50-55 minutes, stirring things around once or twice.

Sprinkle some seeds on top right before serving.
