Slice the zucchinis into thin strips and sprinkle with salt. Let them sit for 30 minutes to remove moisture. Rinse them off and pat dry.

Sauté the onion, garlic, and pine nuts in olive oil until golden. Mix them with the goat cheese, thyme, paprika, egg, salt, and pepper.

Spoon some filling onto each zucchini strip and roll it up into a cigar shape. Coat the rolls in breadcrumbs.

Put the rolls on a baking tray lined with parchment paper. Bake them at 180°C for 20-25 minutes, or until crispy and golden.
