Peel the carrots and slice them into rounds. Boil them in a pot of salted water for 15 minutes until they’re soft.

Drain the carrots well, then mash them until smooth. In a mixing bowl, stir the eggs into the carrot puree. Slowly mix in the flour while stirring thoroughly. Finally, add the shredded Comté, salt, and pepper to the mixture.

Heat up your waffle maker. Lightly grease the plates and scoop about one tablespoon of the mix onto the waffle maker for each waffle. Cook until the waffles turn a nice golden brown.
