Carrot cheddar waffles (Print Version)

# Ingredients:

→ Base

01 - 100g of flour
02 - 80g of shredded Comté cheese
03 - Two eggs
04 - 300g of carrots
05 - Salt and black pepper as you like it

# Instructions:

01 - Peel the carrots and slice them into rounds. Boil them in a pot of salted water for 15 minutes until they’re soft.
02 - Drain the carrots well, then mash them until smooth. In a mixing bowl, stir the eggs into the carrot puree. Slowly mix in the flour while stirring thoroughly. Finally, add the shredded Comté, salt, and pepper to the mixture.
03 - Heat up your waffle maker. Lightly grease the plates and scoop about one tablespoon of the mix onto the waffle maker for each waffle. Cook until the waffles turn a nice golden brown.

# Notes:

01 - You can swap out the carrots for squash or sweet potato without changing any of the ratios.
02 - To make these waffles lighter, use a low-fat cheese option.
