Use your hands or a spoon to combine the ground beef, cheddar, parmesan, onion, garlic, egg, breadcrumbs, and salt and pepper in a big bowl. Don’t over-mix it, just until it’s all blended.

Make 12 even portions out of the mixture and roll each into a ball. Wrap a strip of bacon around each one, securing with a toothpick if needed.

Heat your oven to 400°F (200°C). Place the bacon-wrapped balls on a baking sheet lined with parchment paper. Bake for 15–20 minutes or until the bacon is golden and crispy.
