Soft zucchini chocolate (Print Version)

# Ingredients:

→ Dry Mix

01 - 1/2 teaspoon ground cinnamon
02 - 1/4 teaspoon salt
03 - 1/2 teaspoon baking powder
04 - 1 teaspoon baking soda
05 - 375 ml all-purpose flour
06 - 125 ml cocoa powder (dark chocolate)

→ Wet Goods

07 - 125 ml vegetable oil
08 - 1 teaspoon vanilla extract

→ Extras

09 - 125 ml granulated sugar
10 - 125 ml brown sugar
11 - 2 large eggs
12 - 500 ml shredded zucchini (courgette)
13 - 190 ml mashed bananas
14 - 250 ml chocolate chips

# Instructions:

01 - Set the oven to 175 °C. Coat a loaf pan well with nonstick spray or oil.
02 - In a medium-sized bowl, stir together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon. Leave it aside.
03 - In a large mixing bowl, blend the oil, vanilla, sugar, and brown sugar. Once smooth, stir in the eggs, mashed bananas, and shredded zucchini.
04 - Pour the dry ingredients mixture into the wet mixture. Stir well until everything’s fully combined and smooth.
05 - Gently mix in the chocolate chips, taking care not to overdo it.
06 - Transfer the batter into your prepared pan. Bake for 45 to 60 minutes. Check doneness by poking a toothpick into the center—it should come out clean.
07 - Let the loaf cool completely before slicing. Keep it in an airtight container for storage.

01 - For richer flavor, pick top-quality cocoa and add just a dash of ground nutmeg.
