Heat your oven to 180°C. Coat the pan with butter and flour or line it with baking paper.

In a big bowl, combine the flour, almond powder, baking powder, and salt.

In another bowl, whisk together the yogurt, sugar, oil, and eggs until it’s smooth.

Little by little, stir the dry mix into the wet mix. Toss in the citrus zest if you’re using it.

Pour the batter into your pan and smooth out the top. Sprinkle almonds on top if you want.

Bake it for 30-40 minutes. To check if it’s done, stick a knife in and see if it comes out clean.
