White Chicken Chili (Print Version)

# Ingredients:

→ Base

01 - 1 diced medium onion
02 - 3 minced garlic cloves
03 - 2 tablespoons of olive oil
04 - 1 finely chopped jalapeño (remove seeds if needed)

→ Spices

05 - 1 teaspoon of chili powder
06 - Half a teaspoon of dried oregano
07 - Half a teaspoon of paprika
08 - Salt and black pepper as needed
09 - 1 teaspoon of ground cumin

→ Main Ingredients

10 - 3 cups of shredded cooked chicken
11 - 1 cup of frozen corn
12 - 2 cans (15 oz) of white beans, rinsed and drained
13 - 4 cups of chicken broth
14 - 1 can (4 oz) of diced green chilies

→ Creamy Elements

15 - Half a cup of softened cream cheese
16 - Juice from one lime
17 - Half a cup of heavy cream

→ Garnish

18 - Shredded cheddar or Monterey Jack cheese
19 - Freshly chopped cilantro

# Instructions:

01 - Cook garlic and chopped jalapeño in oil until aromatic, after softening the onion.
02 - Toast paprika, cumin, chili powder, and oregano gently for a minute or two.
03 - Let the broth, chicken, beans, green chilies, and corn simmer together for 20 minutes.
04 - Mix in the cream cheese until it's smooth, then pour in lime juice and heavy cream. Adjust seasoning if needed.

# Notes:

01 - A rotisserie chicken works wonderfully in this.
02 - Pair it with crusty bread or some cornbread.
