Cheese Stuffed Manicotti (Print Version)

# Ingredients:

01 - 8 manicotti tubes

→ Sauces and Cheeses

02 - 24 oz marinara sauce
03 - 15 oz ricotta
04 - 2 cups grated mozzarella, plus some extra for the top
05 - 1/2 cup Parmesan, shredded

→ Spices and Mix-ins

06 - 2 eggs (large)
07 - 2 tbsp fresh chopped parsley
08 - 1/2 tsp salt
09 - 1/4 tsp black pepper

# Instructions:

01 - Follow the cooking instructions on the package for the manicotti. Drain, then leave to cool on parchment paper.
02 - Set oven to 350°F. Lightly spray a 9x13 pan, then spread a thin layer of marinara sauce across the bottom.
03 - Combine ricotta, mozzarella, Parmesan, eggs, parsley, salt, and pepper in a bowl until creamy.
04 - Hold cooled manicotti and stuff each one with the cheese mix. Use your fingers, a small spoon, or a bag with the tip cut off. Fill both sides evenly.
05 - Place stuffed manicotti in one layer over the marinara. Pour the rest of the marinara over the top.
06 - Cover with foil and bake for 40 minutes. If you'd like, sprinkle extra mozzarella on top and bake uncovered for another 5-10 minutes until the cheese melts.

01 - Wait 5-10 minutes before cutting, so the cheese inside firms up.
