Follow the cooking instructions on the package for the manicotti. Drain, then leave to cool on parchment paper.

Set oven to 350°F. Lightly spray a 9x13 pan, then spread a thin layer of marinara sauce across the bottom.

Combine ricotta, mozzarella, Parmesan, eggs, parsley, salt, and pepper in a bowl until creamy.

Hold cooled manicotti and stuff each one with the cheese mix. Use your fingers, a small spoon, or a bag with the tip cut off. Fill both sides evenly.

Place stuffed manicotti in one layer over the marinara. Pour the rest of the marinara over the top.

Cover with foil and bake for 40 minutes. If you'd like, sprinkle extra mozzarella on top and bake uncovered for another 5-10 minutes until the cheese melts.
