Authentic Thai Fried Rice (Print Version)

# Ingredients:

→ Main Ingredients

01 - 3 cups of cold-cooked jasmine rice
02 - 3 scallions chopped into 4cm pieces
03 - 2 eggs whisked lightly
04 - 2 tablespoons of vegetable, canola, or peanut oil
05 - 2 garlic cloves finely minced
06 - Half a white or yellow onion diced
07 - 150g of thinly-sliced chicken breast

→ Sauce Options (pick one)

08 - Choice 3: 1.5 tablespoons of light soy sauce with 1.5 Thai Gold Mountain seasoning
09 - Choice 2: 2 tablespoons of fish sauce + 1 and a half tablespoons of oyster sauce + 1 teaspoon of sugar
10 - Choice 1: Half a tablespoon of soy sauce plus half a tablespoon of oyster sauce

→ For Serving

11 - Cucumber slices
12 - Fresh cilantro
13 - Tomato wedges

# Instructions:

01 - Warm up the oil in a big wok or skillet over medium-high heat. Toss in the garlic and stir around for about 20 seconds.
02 - Add in the onions and stir-fry them for a minute. Toss in the chicken and scallions next, cooking until the chicken isn’t pink anymore.
03 - Push everything to one side of the pan, pour the eggs in the middle, and stir them quickly for around 30 seconds.
04 - Stir in the rice and whichever sauce you chose. Cook it all together for 2 minutes so the rice heats up and gets coated with that sauce.

# Notes:

01 - Using day-old, cold rice gives a better texture.
02 - Swap chicken for shrimp, tofu, or crab if you'd like.
