Set your oven to 180°C and let it heat up.

Rinse the potatoes thoroughly—don't peel them. Put a pair of chopsticks on either side of each potato and cut thin slices about 3-4 mm apart, making sure not to cut all the way through.

Place a small pat of butter on top of each potato. Sprinkle with salt, thyme, and Espelette pepper. Drizzle some olive oil over them.

Pop the dish in the oven for an hour. Baste the potatoes often with the melted juices from the pan. Serve them hot.
