Strawberry Brioche Rolls (Print Version)

# Ingredients:

01 - 567g of fresh or frozen strawberries.
02 - 124g of sugar for the topping.
03 - 4 teaspoons of ClearJel thickener.
04 - 1/2 teaspoon of ground cinnamon.
05 - 2 teaspoons of orange zest.
06 - 170g of milk.
07 - 113g of cream cheese for the dough.
08 - 28g of butter.
09 - 25g of sugar for the dough.
10 - One egg.
11 - 2 teaspoons of yeast.
12 - 6g of salt.
13 - 390g of wheat flour.
14 - 57g of cream cheese for the frosting.
15 - 113g of powdered sugar.
16 - 1/2 teaspoon of vanilla extract.
17 - 1.5 to 2 teaspoons of milk for the frosting.

# Instructions:

01 - Toss the strawberries with sugar and roast for 25-30 minutes. Mash them up, then mix in the rest of the sugar, ClearJel, cinnamon, and orange zest.
02 - Warm up the milk, cream cheese, and butter. Combine everything with the sugar, egg, yeast, salt, and flour. Knead it well and let it rise for about 45-60 minutes.
03 - Roll out the dough, spread the strawberry filling, then roll it up and chill for half an hour. Slice into 12 pieces and let them rise again.
04 - Bake at 175°C for 28-30 minutes until they’re golden brown.
05 - Mix up the cream cheese, powdered sugar, vanilla, and milk. Spread over the warm rolls.

01 - It stays fresh for a few days when kept in the fridge.
02 - Good for freezing too.
