Spinach & Feta Loaf (Print Version)

# Ingredients:

01 - 100 g of crumbled feta.
02 - 3 eggs.
03 - 100 ml of milk.
04 - 1 tablespoon of chopped basil.
05 - 1 clove of garlic, peeled and cleaned.
06 - 2 tablespoons of olive or vegetable oil.
07 - 100 ml of cream.
08 - 3 tablespoons of mixed seeds.
09 - 2 tablespoons of olive oil.
10 - 200 g of fresh spinach.
11 - 1 packet of baking powder.
12 - 200 g of flour.
13 - Salt and pepper.
14 - 1 minced shallot.

# Instructions:

01 - Heat up some olive oil and cook the spinach along with the garlic and shallot until all the liquid has evaporated. Set aside.
02 - In a mixing bowl or food processor, combine eggs, cream, milk, oils, flour, baking powder, basil, spinach, and two tablespoons of the seeds. Toss in the crumbled feta. Add a little salt and pepper.
03 - Pour the mixture into a loaf pan lined with parchment paper. Sprinkle the rest of the seeds on top. Bake for 10 minutes at 200°C, then make a cut along the length of the loaf. Continue baking at 180°C for 30 minutes.
