Cucumber with spicy sauce (Print Version)

# Ingredients:

01 - 2 large English cucumbers, sliced into roughly 8 mm thick rounds

→ Seasonings

02 - 1/4 teaspoon ground black pepper
03 - 1 teaspoon dried red chili flakes
04 - 1/2 teaspoon salt
05 - 1 tablespoon honey
06 - 2 tablespoons low-sodium soy sauce
07 - 2 tablespoons rice vinegar

→ Other

08 - 2 minced garlic cloves
09 - 2 tablespoons peanut butter
10 - 1/2 cup toasted and chopped peanuts
11 - 2 tablespoons fresh parsley, chopped

# Instructions:

01 - Put the cucumber slices into a bowl and sprinkle them with salt. Toss them gently to coat. Move the cucumbers into a colander and let them sit for an hour to drain any extra water.
02 - Stir together soy sauce, peanut butter, rice vinegar, garlic, honey, chili flakes, and black pepper in a small bowl until smooth and combined.
03 - After draining the cucumbers, place them in a big bowl with peanuts, parsley, and the dressing mixture. Toss everything so it's evenly coated. Serve right away.
04 - If making this in advance, cover it tightly and store in the fridge for up to 8 hours. Before serving, let it sit at room temperature and give it a good mix, as the peanut dressing can settle at the bottom.
