Spiced Roasted Carrots (Print Version)

# Ingredients:

01 - Bunch of small carrots – 1 bunch
02 - Extra virgin olive oil – 2 tbsp
03 - Loubia Spice Blend – 1 tsp
04 - Balsamic vinegar – 1 tbsp
05 - Honey – 1 tsp
06 - Feta cheese – 50 g
07 - Sea salt – to taste
08 - Chopped parsley – for topping

# Instructions:

01 - Chop off the carrot greens, then scrub them clean with a brush. Next, slice them lengthwise into halves.
02 - Place the halved carrots in a large cooking dish. Use 1 tbsp of olive oil to coat them, sprinkle the Loubia spice and add a pinch of salt. Roast for 15 minutes in a preheated oven set to 200°C (regular heat).
03 - Stir together the balsamic vinegar, honey, and the second tablespoon of olive oil.
04 - Once the 15 minutes are up, brush the carrots with the honey marinade. Pop them back into the oven at 160°C for another 15 minutes. Use the tip of a knife to check for tenderness.
05 - Transfer the roasted carrots to a serving plate. Crumble feta over them and sprinkle with chopped parsley.
