Chop off the carrot greens, then scrub them clean with a brush. Next, slice them lengthwise into halves.

Place the halved carrots in a large cooking dish. Use 1 tbsp of olive oil to coat them, sprinkle the Loubia spice and add a pinch of salt. Roast for 15 minutes in a preheated oven set to 200°C (regular heat).

Stir together the balsamic vinegar, honey, and the second tablespoon of olive oil.

Once the 15 minutes are up, brush the carrots with the honey marinade. Pop them back into the oven at 160°C for another 15 minutes. Use the tip of a knife to check for tenderness.

Transfer the roasted carrots to a serving plate. Crumble feta over them and sprinkle with chopped parsley.
