Turn the oven on to 200°C and line a baking tray with parchment paper.

Rub the salmon fillets with olive oil, then sprinkle them with salt and pepper.

In a bowl, combine parmesan, breadcrumbs, mustard, paprika, garlic powder, thyme, and cayenne.

Generously press the mix onto the top of each salmon fillet.

Pop them in the oven for 15-20 minutes, or until the topping is golden and the salmon is cooked through.
